Gino takes us to Italy's northernmost, Alpine region : Trentino-Alto Adige, formerly Austrian Sout Tyrol. It's cattle country, where he visits a dairy farmer to learn make a cheese with warm milk. Next his variation on the traditional 'Strudel' pastry, combining favorite local fruit apple with raisins fresh raspberry coulis.
