Gino is back in Tuscany, now in the glowing hills, which are great wine country, including Chianti. He visits most picturesque Sienna, where the key culinary treat is a dessert, the spices-rich comfit fruit pastry 'panforte', literally strong bread. After learning about the main types, Gino makes his own variation, featuring dark chocolate and orange zest. He presents it to the monks of a self-sufficient monastery, who let him taste their own wines. He uses their favorite red to marinade beef served with a three beans salad. Written by KGF Vissers
